I’m toying with the idea of buying a cheap run about and keeping it at my fathers apartment for all the family to use when we visit. Is this possible as a non resident? I’m thinking about owner registration, insurance, tax etc…

As long as you have an NIE number and an original Escritura (title deeds) or rental contract for accommodation in your name you should be fine

There is no problem in keeping a car in Spain. They will love it as you will pay the road tax, Insurance tax. I have had my car in Spain for a number of years. The car hardly gets used around kms 1000 per year. I would like to sell it but do not spend enough time in Spain to get around to advertsing etc.
You will need to get the MOT. Plenty of Insurance companies & they will accept your UK no claim bonus .

One thing I have noticed is that you are far likely to get away with fines if you have a foreign owned car.

Besides the taxes. Why do you think they insist in getting your registered in Spain.
